Who is your favorite Mythical Being as retold either in modern literature or in popular culture, video games, etc.?
Mine is probably Bahamut. I've not seen many mythical creatures or beings undergo so many re-tellings and transformations as Bahamut. Originating as a a giant fish that serves as one of the layers holding up the Earth in ancient Arabic Myth, many of us probably know it as a giant dragon summon from any of the Final Fantasies.

I love the Legend of Sleepy Hollow, and especially, the Headless Horseman. Not the guy impersonating him, just the Headless Horseman. I feel like the show that came out last year put a very interesting spin on the whole tale of Ichabod and the Headless Horseman, and it is really awesome to watch. Not to mention seeing all of the different inspiration it had in the gaming industry. Take League of Legends, for example. For a champion called Hecarim, there is a Headless Hecarim skin (which is my absolute favorite)

Satan, or demons in general. Pretty brute.
