Get pilgrim bellclaire and just roll and you should be fine

Also blocking is for chumps who wanna die, just dodge roll into their attacks. Besides that there's a way to skip them if you have the Antiquated Key. You can break a wall next to where the pursuer spawns over by McDuff's Workshop and you'll find yourself past them in the Servants Quarters.
