Personally, I think that hobgobs are, without a doubt, my most hated enemy.
Unless slain with pinpoint accuracy, and even then do they not always die from a crit shot with my trusty Fatebringer, will you dismiss them quickly, before they do their little mini-radiance-shield-bubble-fire thing.
Vex minotaurs no longer are my most hated because.... Well, because Swordbreaker.
Which enemy leaves you frustrated upon sight?
How do you decimate that yellow bar of HP?

after hundreds-thousands of hours (depends on the clock you look at I guess) I'm gonna go with RNG, I know xur had it week 2, while I was still a mere lvl 15 and had no strange coins to rub together, but I still have no gjallarhorn. and yet I've carried many first timers through the raids and several times they would get the gjallarhorn on their first vist to the exotic chest one of which was literally at hour 30 or so of playing the game. this i'm sure is RNGesus poke at my misfortune. so yes, to summarize my most hated enemy in Destiny is by far the RNG

Not sure about most hated. I like most of the enemies you mentioned because of the reasons you mentioned. The enemies I hate are the cabal in general, because they are so boring and shit. Its like they gave up with the cabal. And the phalanxes are the worst. So lazy. Like the dudes with shields in GoW, like the guys with shields in Borderlands 2. Lame and unoriginal. You could say the same about some of the Hive or Vex, but, I like them. They have more character.
