Because an unreleased game has everything they ever wanted and some. You get excited because the marketing team leaves giant gaps you can fill in your own head. Once the player fills the gap with something they like, poof! Over hype.

Yes, but after so many over-hypes, why don't people catch on and stop? Do they not even realize they are over-hyping?

They don't realize they are over-hyping because, as far as they know at that point, everything they fill the gaps with is real any plausable.
