I'd love to see HD remakes of those games. God damn, amazing.
I'd rather see a Jak and Daxter HD, though.
BTW, is this just blind speculation or is there evidence for it?

Indeed if would. Unfortunately, Jak and Daxter: TPL only lasts at most 5 hours to me. I've beaten that game too many times for it to be difficult.
