Explain to me how the ring wraiths work.

In the book he didn't take it off, they just did it in the film for cinematic effect

As far as Bilbo removing the ring is concerned, you can see that at multiple occasions during the Middle Earth series, the will of the ring becomes too strong, and they are forced to take it off.

What exactly do you want to know about them? The elves forged the Rings of Power and Sauron gave 7 of them to dwarves and nine to men. Sauron then forged the One Ring to rule them all (duh) and took corrupted the men. The dwarves became too obsessed with greed and did not bend to Sauron's will. They're wraiths.

I meant like how did they necessarily become wraiths, did they die, or what?

Wraiths arent dead but neither are they alive. I think in Shadow of Mordor the game, the protagonist was kind of a wraith. His family got killed but he himself got slit on the throat with a dark magic blade and was neither dead nor alive. More like he could alternate between realms.

Well the rings force them into service under Sauron. Eventually the Rings just made them invisible to the normal eye.
