I can't remember the exact explanation, but in the EU Darth Bane novel, the Blademaster says something about how the biggest advantage double-bladed sabers have is the fact that they're very imposing and threatening, in terms of perception, to whoever is fighting against it. Bane described it as almost like having to fight multiple lightsabers at once. This advantage can be easily overcome, however, and when it is, the double-bladed saber loses its effectiveness and generally becomes un-viable. One major exploitable weakness is the large handle and how the user has to wield it. We saw this in episode 1 where Obi split Maul's lightsaber in half.

I can say they are at least when I used to play with plastic lightsabers with my friend. Keep the second blade concealed until they least expect it, and [b]BAM![/b] they get a blade coming in frommthe opposite direction they were expecting!

In the hands of someone who is highly-skilled (like Exar Kunn and Darth Maul) it is EXTREMELY deadly...and it was a weapon that was both feared and loathed by jedi. Its also very effective in allowing one user to aggressively confront and fight multiple opponents. But the down side is that it requires a great deal of room to use. If you go back and watch the Phantom Menance, you'll see that Darth Maul is constantly aware of this....and constantly giving ground to make sure he's in a position that he has the room he needed to make maxium use of his weapon. ...and he cuts down a Jedi Master (Qui-gon Jinn) when he finally manages to wear him down and isolate him from his padawan (young Obi-wan) The Jedi basically renounced the use of such weapons and opt for dual-weilding of single bladed weapons. This fits better with the Jedi way. In that Jedi tend to operate out in the open as groups....and an provide mutual support. So a Jedi is less likely to be isolated and fighting multiple opponents from multiple directons. Jedi also emphasize defensive techniques rather than offensive. So two single bladed weapons are better for warding off attacks from multiple opponents---especially blaster-wielding opponents----than is a dual bladed light saber.
