2001: A Space Odyssey was pretty memorable. The title sequence and the opening scene with the apes is a classic.

As others have said: The Dark Knight is basically a tutorial on how to begin a movie. But I also really like the first fifteen minutes or so of John Carpenter's The Thing. Perfect presentation of themes and plot, and genuinely chilling.
