So the taken are the corrupted will, each species have taken counterparts...except the humans. Why do you think that is? Just a random thought.

Oryx hasn't been close enough to the last city and guardians cannot be taken because the blight has to bind to a living target and we are just cooler zombies

Because there's so few humans left that our entire population fits in a single city. The only humans Oryx has encountered are guardians, and guardians can't be Taken.

Becuase there aren't that many humans left and the only ones who have the means to be anywhere remotely close to Oryx are the Guardians, which aren't easily corrupted. That's why.

The only humans that come anywhere close to Oryx or his echos are warriors of light. I imagine taking a Guardian is similar to trying to fit a square block in a circle hole.

Personally I think it is becayse if how nearly every human alive sits either within the tower, or under the traveller.
