So recently I started dating this person. They're transitioning to a girl. They've still got all their male pieces and parts, but they identify as a girl and are on hormones.

Technically, yes. If your partner identifies as a girl, no matter her genitals, she's a girl. If you date her through this and still find her attractive, you're either a lesbian, bisexual, or pansexual. However, you also have every right to not find her attractive, as it might not be your sexuality.
