Agree with OP, I also dont understand why people insult you just for having a different opinion from them.
Example:
Poster 1: I like red. Whats your favorite color?
Poster 2: Black is better,red is for redtards!

Of course some that is just trolling. But I'm really fascinated by the all or nothing, mine and no others mentality of technology fans, particularly gamers.

I dont believe it's trolling in the majority of cases, it's because they take the competition on a personal level. This causes the mentality that you describe of "all or nothing".
