Why would I aim to kill when you could easily disable them at this point? I get if it's heat of the moment adrenaline, but killing someone when you have the option of simply taking them down is a bit extreme.
I suppose that's only the talk of someone who hasn't been in that kind of situation though.

You've got a knife, and they aren't focused on you. Depending on where you attack and how fast you do so, you can [b]easily disable them[/b].

OP said you [i]see[/i] a knife, not that you have that knife. They'd likely see you as you went for it, and disabling an aggressor with intent to kill isn't nearly as easy as it looks in the movies.
