It's not possible to do continuous "anti-gravity" using a plane for the time-frames you are implying.

I see what you mean.. they stitch it together and make it in advance. That's why we don't see much interior on the ISS. Also, why is every room [i]about as big as a plane[/i].

That's a pretty huge conspiracy if they record every livestream in advance. That would mean that they bring every person involved with asking questions into the conspiracy. Hard to imagine they can trust every person not to spill the beans on that one. But I don't know where you are getting the "rooms as big as planes" thing. The rooms I've seen are not nearly that big.

Also, NASA's employees might actually think they're working on something space related, but perhaps the technology they work on is for something else.

It's actually a method very often used in space movies. Allowing the plane to fall for a couple seconds creates a state of anti-"gravity". It's really cool actually.
