If I land on a planet again are all the previous things I found gone?

Nope, everything is generated based on a seed that's set in stone, the seed never changes so what's generated will always be the same no matter how many times you leave and return.

I just landed on the planet again and can't see shit from earlier

Planets do rotate under you. It's likely it has rotated enough while you were in space that when you landed once more you are now on a completely different part of the planet.
