make sure you get stuff that locks out at certain places
I am an achievement person so I have been hunting the last few achievements, but I can't get some of the rings at the start since I passed points in the game, so I had to wait until NG+ to get them.
however that doesn't really matter, since you have to beat the game 3 times for the 3 different endings I guess

Not to mention +1, +2 rings can only be had in NG+, ++, and AFAIK are not trade-able

certain npcs mainly like for one ending you have to get 5 dark sigils from an NPC Before the Abyss Watchers also Hawkmoon is used alot (in your shrine). I killed him my first run through just because :P things like that. also there is a Covenant that is locked once you beat a certain boss and although you can get all the rings you missed in the next game, it's far easier to do it before starting the next game

I think that poster assumed you were playing Dark Souls 3, so if you're playing DS1, a lot of that info isn't relevant.

Probaly certain NPC quests, or areas that are altered by defeating a boss or some other action. Just my guess tho...
