Once you talked to the king with the 3 crowns he does two things to you. You cannot be cursed and if you have the crown on when you die you don't lose your humanity. Keep in mind this is only for the current playthrough you are on, so when you go to the next new game you gave to get the crowns again. That's the only thing they do.

3 from the memories in the trees, 1 from the Ancient Dragon at Dragon Shrine, and the last one is in Blood Gultch. From the srcond bonfire at blood Gultch you go to those things that pop out of the wall and look left into the darkness(torch helps) there will be a ledge you drop down onto, drop down again and there will be two giants down there that you have to kill for the soul.
