Lightning can be bent by any bender i believe, but they only show fire benders doing it.
Earth though since there's a lot more than just fighting that you can do with it (i also think they're the best fighters).

No lightning can be redirected by any bender, but can only be bended by the most elite of firebenders. When it began, only Iroh, Ozai, and Azula could do it. Eventually it spread out to more firebenders like Mako in the second series
