I just played (and finished) Jet Force Gemini last year. Still pretty fun if you can deal with the dated control scheme and mechanics. Great music also.
Some of my other faves:
Mario 64, both Legend of Zeldas, Turok, Body Harvest, and of course Goldeneye 007 and Perfect Dark. If you were a console FPS fan before Halo, it was thanks to the N64.

It did have cool music, and was suprisingly bloody as well. Another game that had a great soundtrack imo would have to be Perfect Dark. It was really dark, somthing I didnt quite pick up until not too long ago.
