Orange takes down orange shields blue takes down blue shields and purple takes down purples shields its as simple as that.
Some strikes such as the nightfall tell you a certain damage type does extra damage so use the corresponding weapon

Yes only the shields. An orange weapon will do 2x damage to an orange shield. However, if you are on one of the endgame maps with "solar(orange) burn" you will do 3x damage to everything with solar. So if you are on a solar burn map its still best to use orange damage vs a purple or blue shield.

No some enemies are weak to them pretty sure purple hurts vex more and red hurts cable more not entirely sure though
