They added the subtitle "Combat Evolved" because they didn't want people to think that it was a religious game.
There was a video of a few Bungie employees and Marty playing and commentating through the whole trilogy. They explained the subtitle while playing Halo: CE.

Bungie wanted it to just be called Halo.It was Microsoft that made the CE decision.

Yes, I know. The marketing team made the decision so people would know what kind of game it is.
