Beat it with two different characters. One is on NG++. I have all achievements except for the spell collections.

The covenant ones? You can buy those from I think leningrast NG++

One of them can be obtained from killing 20 NPC Red Phantoms from the bell tower (it's been a while for me so please look it up ). Regardless, I got the platinum on the PS3 without any direct PvP combat. The rest is obtained at the castle with the Ghost NPC in new game++. It's doable friend.
