They didn't 'freeze' light, they trapped it inside a crystal.
Just like the actual scientist said, this could be very useful for long-distance quantum information science, but nothing about this is relevant to lightsabers or holograms.

I think you will find that it is crystals that are installed in lightsabers that make them work and give them their color. When I am a Jedi I will make you laugh at yourself you weak minded fool.
