They wouldn't personally go out and slit a cow's throat whenever they wanted a burger. It's a level of disconnect between the source and end product that everyone has, it's just more conscious for vegetarians/vegans.

Our bodies do not require meat for survival. Our digestive tracts are not efficient at passing meat. We are intelligent enough to discern these facts. We only eat meat because we choose to, unlike true omnivores who are instinctually inclined to eat meat.

However, when we don't eat meat, our bodies don't receive the natural nutrients we get in meat, and we have to take vitamins and supplements. It's easier and cheaper to just eat meat.

There are plenty of meat eaters that also take supplements. Most vitamins are used to fill nutritional gaps for any food in general.
