Maybe we'll have to search for parts before we can build a mount, but in return they increase our speed or accuracy or something?

Could be a great option to. Let's say there are dungeons and raids in the game. 90% is loot for the character itself and 10% is loot regarding your vehicles and such. Would be nice.
