The most recent one that comes to mind is that Metal Gear boss battle from MGS: Peace Walker. I think it had around three/four parts that took me 30-50 minutes each.

Boss fights in Peace Walker were just tedious not hard.

They're so much more fun when you have Battle Armor w/helmet and rocket launchers.
