I learned a technique from watching 'No Reservations' - if you're using a skillet or frying pan, season and form your patties as usual.
Brush both sides of the burger with butter, then sprinkle just a pinch of sugar on each side.
The butter, fat, and sugar will caramelize the bottom, instead of simply charring it. This will lock in a lot of the juice. If done right, a fully cooked burger will be as tender as a rare burger.

If you're using a skillet or a frying pan to cook a burger, first and foremost you should slapped. Go put some coals on the grill.

Charcoal grilling is by far my preferred method of cooking just about any meat, but I only bust out the grill if I'm cooking for more than myself. Also, you should serve yourself a healthy slapping for every time you've ordered a burger from anywhere but Burger King then, because proportionally few restaurants flame grill them.

Then you might as well season your burger with poop, because that is what it will taste like anyway off a frying pan.

So do you only eat burgers you make yourself, or from Burger King? Because a huge majority of restaurants that server burgers cook them on a skillet...
