I've killed a some Genjis as Mei. I don't think Genji can deflect the frost spray, and if you freeze him he's pretty much dead.

This. I just got the game a couple weeks ago and have barely played anyone but Mei. It's hilarious to start freezing a Genji and see the automatic reflect reflex, and then practically being able to hear their confusion as they freeze and get headshot by and icicle. "WTF I was reflecting! I'm immune to everything!"
