As of now my computer is just a list of parts... A relative is helping me pay for one and I'm going to sell my old one to contribute to it.

I've been doing an f-load of research over the past month figuring out which parts are the best bang for the buck one can get. Budget is between $1,450-1,750
The GPU market is a mess right now so I will plan on waiting until the end of the summer for when I get the parts together

Dont skimp on the power supply. It'll bite you in the ass later.

Got it! Didn't know for sure on how much it mattered, but ill take your word for it.

Does that mean I should go for a +80 gold or go for a +80 Platinum psu?

I never go less than gold, but that's just an efficiency rating. You want to to get a comfortable amount of wattage that sufficiently powers your build. And always have it plugged directly into the mains. A friend of mine had his plugged into an extension cord and shit his PSU up.
