My main logic question is, why do GUNslingers throw knives and BLADEdancers don't?

No the subclass was named after the super, the blade dance having blink strike makes more sense on a subclass that has blink

There is no lore-based reason for either subclass to have or not have blink. That is a variety/balance decision.

Actually the blade dancers learned the blink ability from void walkers, lore which is mentioned from Cayde 6 and other lore sources.

Gunslingers didn't learn it because most of them were out on Earth, almost every one of the pilgrim guard were hunters. Also many of the first guardians and gunslingers were out in the wilderness like Dregin Yor
