Dont get a founders edition GPU. They are overpriced. Also Im pretty sure they are blower fans and the aftermarket fans are usually better. Plus I heard people are having issues with thermal throttling with them.
Also I would get a regular HDD as well. Games and files are just getting larger and larger, and having more than 750 gb will come in handy. Also dont get an optical drive. You will never use it.

Which 1080 do you think I should get?

There really isnt that much out there at the moment. The 1080 is still pretty new. Anything from the major companies is usually good. EVGA, MSI, Gigabyte, Asus.

The non reference models are bigger but still have to problem fitting into my PC?

Not at all. Unless you are building a mini ITX build then you should be more than fine.
