To be fair, list another thing that happened to the franchise.
Things like KOTOR was more like an addition
The only thing I can think of was the specialised edition, and look what happened.
George Lucas giving up his role as director was pretty good.
Allowing people other than himself (George Lucas) to have some creative liberty and expand on the universe (now no longer canon) was a huge deal. Take Boba Fett for example. In the original movies he's little more than a throw away thug. Now he's one of the most popular characters in the franchise.
Expanding into videogames. Return of the Jedi came out in 1983, the next film (The Phantom Menace) wasn't released until 1999. In that time, however, there were over 30 games released. How many other franchises that old has managed to do that? Maybe Alien and StarTrek but not nearly with the same impact. This helped keep StarWars relevant to the youth.
