Is it possible for me to keep playing Destiny on my Xbox 360, and still use my Xbox One for other games? This would save me a lot of time, rather than transferring the game to another console. I do have an Xbox Live Gold account btw. Thank you.

Yes you can! I most play Destiny on 360, its actually the only game on play on 360. The remainder of my time I play on the one! No issues.
