So what would have happened if the Pygmy had found a different soul?

Most likely much of the same, except he would not have been associated with darkness. The Pygmy, and others of his ilk, were probably considered as lesser than the other beings. As such, he might have laid low, just as he had before. However, a lot of things might have changed in the long run, considering the Abyss and such.

I don't think that a human would increase in size given more power. In Dark Souls 2, the Chosen Undead amasses arguably more power than the Chosen Undead in Dark Souls, and yet does not change size. As for the Abyss, it is an endless plain of dark, and generally, is at peace. It is also seemingly a different plane than the physical realm that we see. However, when the citizens of Oolacile dug up the grave of Manus, he ended up bringing the Abyss to the physical realm, where it began tainting the land. Darkness is not inherently evil, however, it can corrupt beings and poison gods, and as such, is viewed as evil, and this is only strengthened by the corruption of Oolacile. Artorias, one of Gwyn's knights, debatably the strongest of the knights, found a way to traverse the abyss, but even so, he was overcome. The Chosen Undead put an end to the spread of the Abyss by destroying Manus, but the Abyss remained. Kaathe, the serpent who had tricked the citizens of Oolacile, had more plans. He later tricked the Four Kings of New Londo into accepting the darkness, and they summoned the Abyss once more. This time, there were no heroes to stop it, so they flooded New Londo in the hopes of stopping it. Of course, we end up killing the Four Kings as well. In Dark Souls 2, the peaceful side of the Abyss is shown by the graveyards far below the Shrine of Amana, where humans go to rest in the comfort of the dark. The light, though, agitates it. The darker side is shown through the covenant leader Darkdiver Grandahl, who sends you into the Abyss to strengthen yourself. You travel deep into the darkness in order to find, and beat, the mystical being known as the Darklurker.
