Considering the history and foundations of the gaming industry it's ridiculous to say you have all Japanese developers.
Bloodborne and Dark Souls are more popular examples of recent big name Japanese titles.
The problem that's easily seen no is many of the titles being produced in Japan, simply aren't being localized here. And unfortunately there has been a change of focus for many Japanese devs when it comes to what audience they want to focus on. But many things tie into that, like shift in cultural aspects, change in market preferences,etc.
I would say their games aren't terrible but more niche than your generic shooter. A lot of history and creativity comes out of Japan.

I'm not really a shooter guy but more of a story guy I was willing to try a Jrpg like FNF but then realized it had a more confusing universe then the dragon ball z universe.

Most Japanese franchises have been around for decades and sometimes can be pretty convoluted. I recommend starting with something final fantasy or shin megami tensei, they may seem complicated but I promise they're more straight forward than they appear

I despise final fantasy for having a dumb plot and 100s of titles.

Those are completely separate from literally 97 percent of the franchise. And all of them are based around FF7. But frankly there's tons more in final fantasy than ff7. Try ffx, ffix or ffviii (10, 9, or 8)
