Hello,
Yellow health bar (majors or ultras) ogres and hydras do not count towards grimoire. Only red health bar enemies do.
Also important, kills from raids or PoE also do not count towards grimoire

Yeah I meant to add in red bar enemies aren't counting as well. It's weird
