Oonsk is a live and well in Halo 5!!
Take a look at Master Chief's left knee and you can see he is right there.

You are correct. It was made famous when an image of Halo Reach was released from Bungie before the launch and somebody gave it the name Oonsk. It was well received and became a bit of a short lived but famous meme here on Bungie.net. So much in fact, Bungie turned Oonsk into a profile pic that can still be used today here on the forums.
