Computers, at this current point, cannot quite calculate an infinite quantity. There are theories floating around that if a computer could actually calculate using infinity, then it would be quite difficult to disprove that the universe could actually be a simulation.

Infinity isn't a number, it's not a quantitative value, it's a qualitative concept. No computer will ever be able to generate an infinity, only simulate it, just like our minds cannot comprehend an infinity, only guess what it would mean in comparison to smaller numbers.

Precisely. You summed up what I was attempting to say. It is impossible for computers to calculate infinity (I was trying to quantify infinity for the sake of sentence structure), therefore it is impossible for a computer to simulate a universe. If computers could use simulate infinity, then within that simulation, another simulation could be run and even another. That is the point I was trying to make, apologies for any miscommunication when it came to terms of trying to use "infinity" in a sentence.
