I don't understand how the stats can be different for armour?

It's random. But all Xur ones a given week are the same.

Even though all the armor have the same defense stat, they all have different Intellect, Discipline, and Strength stat that can be really helpful

Really? That's interesting...I'd thought that given it's an exotic, they'd be the same

Try your luck with the yellow engrams for motes of light. Sometimes you get good stats or wait and see if xur sells an upgraded piece. I traded in my hunter helmet for 30+ more discipline once.
