I'm inclined to think that if an Avatar managed to study and work on their abilities long enough, that they are very well able to use advanced bending techniques, but the only Avatars of whom we as viewers get to see enough of a chunk of their lives to know what they do, are all young, and only just getting into multiple-bending styles amidst eras where they don't exactly have a whole lot of "free time"/ years to learn the hard core stuff. For all we know, Aang and Korra do eventually master metal, ice, lighting, whatever bending after their respective series have ended.

Aang was able to water bend in Episode 1 while in the Avatar state despite have no water bending training, the moment called for it and his past lives experience was called upon. If Aang learned it (Clearly didn't learn blood bending as we see in LoK since he could over come it by using the Avatar states power to over come it.) then Korra would have been able to.

Did he NEED to ice/ blood bend in that situation? I don't believe so, and I'm pretty sure that an individual Avatar's moral distancing from certain forms of bending (blood bending) or actions (killing, in Aang's case) are still part of them when they enter the Avatar state. What's more is, learning the basics quickly doesn't necessarily mean they get the advanced techniques right away.

Ice bending could have come in handy in many situations which Katara used a fair amount in the show, blood bending could have been used to....I dunno.....stop Soka's sword from going through him when Katara was fighting the blood bender so Katara didn't have to? Or to stop the fire lord and a bunch of other times. I'll give it a break that Metal bending and blood bending was pretty new to the roster but ice bending has obviously been around for a fair amount of time.
