Steak juice is mostly just water, but the red coloring is due to the protein that's inside the meat, myoglobin. In high concentrations, myoglobin's red pigment is quite visible. It's simply some of the meat's protein mixed with water that has left the meat. If we want to get morbid, you're eating flesh that was once saturated with blood, but no longer is. At least you like it cooked very thoroughly.
