After several hours of research I've determined these are the most accurate size dimensions for the starships seen in Destiny 1 and Destiny 2. Some of these sizes are confirmed canon (The traveler, the fleet command ship, the traveler cage ship, and the fallen skiff) and the rest were calculated based on in game reference points and the assumption a human guardians height is 6.1ft. There are also several concept art images that deliberately show the scale of certain vehicles in relation to a guardian (which is how I was able to determine the size of the colony ship).
