It's always possible that the Vex tampered with the star itself. If they can poison an entire planet and convert it in a few days (through granted, Mercury's pretty small), then a star may not be much higher up. For all we know they could have something powerful enough to convert or at least drain stars of their energy which could be used in their conversion processes. It would make sense for them to have something of the like if they plan to convert everything.
