Starter Pokemon are all manmade, like Mewtwo! :o
In seriousness; in the anime (and presumably the manga) they are found in the wild, so canon-wise they probably are in the game, as well, and the fact that they don't is purely a gameplay mechanic.

I thought game lore didn't follow the anime? I understand it for the stater of the gen you are playing but why no wild bulbasaur in sinnoh? (Spelling?) Lol or mudkips in unova? Don't quote me on this, but I believe all three "universes" (games/anime/manga) all have the same lore, and the story only begins to differ once their stories start. And that's so old starters are rare, too. [spoiler]Of course! They hides them from us! Sneaksy, filthy little hobbitses![/spoiler]

But the professors have a seemingly endless supply of these mons, every child gets one of the 3 so how rare are they really?? Think I'll have to find someone who dose poketheorys on YouTube, "just because" doesn't work out for me lol

Well, again, it's a gameplay mechanic. Lore wise, Goku or Frieza could easily destroy a planet, but neither an do this in any Dragon Ball games I know of (outside of cutscenes), and for good reason, it'd be op. Starters, in terms of gameplay, are supposed to be rare, so you can't find them in the wild. Yet in the anime, where you don't need a gameplay mechanic, they're found in the wild.
