Can I still play the game without updating it?
Do I need plus to play online with other people ( if I even see anyone)?

Yes you can play with out updating it, however the day zero patch added soooo much to the game. No you don't need PS+ for any of the online features, at all. Although your version may be incompatible with the current version on the servers. (It's a client side game so you can even play offline).
