Surely the fairest way is customs, catchup and contact all off. The only difference is skill level, and if driver X beats you it means driver X is better than you.

You misread - customs off, contact off and catchup off. Mind you, the only class where customs are a real issue imo is supers because of how expensive they are to buy. With sports cars, you can get the overpowered one (Elegy*) for free and the other classes of car can be stolen. *I also reckon the Elegy should get its brakes buffed and moved into the super class, but that's another issue.
