I'm late to respond to this, but what he told you was somewhat wrong. There are two versions of the Smelter Demon: the original in Iron Keep, and a new version in the "Crown of the Old Iron King" dlc. This is where you'll find the Aged Smelter Demon he mentioned, although it is true that both versions are skipable.
