Sensitivity isn't an issue. Play with what you're used to, and if you want to play at higher sensitivities just practice. I snipe with a 10 sensitivity and I'm rocking a headshot percentage around 80%.
I'd say it's better for people new to sniping to start off at a lower sensitivity, it would allow a smoother learning curve in early pre aiming and more accurate target acquisition, with practice the sensitivity could be raised slowly as the user becomes accustomed to each newly acquired skill, depending on how well they do obviously, sure I could raise from a 3 to an 8 and I'd probably still do pretty well for the most part, but from what I've seen and heard those that struggle on a high sensitivity -6-10 respectively tend to quickly improve on those things I mentioned pretty soon after.
