I once did a run where I never fast traveled save for the carriages outside the four major holds. I encountered so many new things. Finally saw the headless horseman outside Whiterun too. It became my favorite way to play the game and I will be doing that on my first run of the next Elder Scrolls game.

I've done that on skyrim and fallout (all of them). It truly is the best way to play.

So many new things? Do you mean like discovering new places you never would have found before? Or even more than that?

Both. Like I said I finally encountered the headless horseman outside Whiterun. There are little things that aren't actual quests. Like I found the abandoned little campsite of an alchemist. Read his journal, he talked about a little pond with Nirnroots upstream and something about Spriggans. I followed the stream and found him dead in the pond. Just little immersive stuff like that. I always explored more caves and ruins along the way from place to place, something I would have missed if I fast traveled everywhere.
