Know nothing about green cheese but any smoked cheese is delicious

Green is regular cheddar cheese before it is cured. It can either be the curds right after the initial cheese making processing, or the freshly pressed curds into a longhorn form. But the cheese itself is not aged / cured. This gives it a more salty flavor, and at room temperature, it squeaks when you bite into it. It's very mild tasting.
