But I should have gotten my weekly gambit completion done. When turning them in I got the gold banner saying weekly completion. So I didn't have time to claim it, but when I loaded in after reset it should have already been completed. This makes me think some of my bounties I turned in right before maintenance started didn't count.

If not claimed before reset, that will also reset. Its a weekly challenge, if you had 8/8 done an then maint kicked you out once you logged back in your progress goes to 0/8. In that case no you wouldn't get your bright dust, need to claim everything before reset happens, or your progress is reset

If you have it unclaimed it sticks around, only if you meet the 8/8. My strike progress stayed, my gambit progress didn't. I got strikes done much earlier and gambit right before maintenance.

They don't, they go back to 0/8, you must of had unclaimed strike bounty from the week before or you did a few before reset last week an you turned them in after reset happened there wastn main last week so you wouldn't of been kicked out but would of seen the weekly reset node pop up. All vendor challenges get reset at the weekly reset time if not claimed before then your progress is lost.

You think I forgot that I turned in 8 unclaimed strike bounties? What? No, I logged in after reset and my strike weeklies were all done and my gambit was at 0/8. If you turn in 8 of 8 and get that completion, it sticks around, it just costs you the next week. So I claimed my strike bounty and now I don't have any more strike bounty progress until next reset.
